Cheshire Cat & Randall Boggs Disney Theme Birthday Cake

Cheshire Cat (Alice In Wonderland) & Randall Boggs (Monster University/ Monster Inc) Theme Birthday Cake that I made for my 7yo son. Cakes were homemade and every other decorations were hand shaped from scratch. 


My son's birthday cake is always unique because he chose the theme, I made the cake. 

"He chose the theme" , the theme never a simple and common one that one could find at any bakery or cake shop in Singapore. It has to be custom made, not by any bakers because mommy knows how..... :)



This year, he wanted a Cheshire Cat + Randall Boggs cake. Cheshire Cat from Alice In Wonderland and Randall Boggs from Monster University/ Monster Inc.

These 2 Disney characters are not easy to shape from scratch especially with their smiling expression. The teeth were the hardest thing to do.

It is advisable to remove the visible fat on the meat so as to make it a low fat item. Be moderate in using nuts, since they also hold fats. Among the dairy products, milk is the complete diet with most of the required vitamins and minerals like calcium, phosphorus, and magnesium. Cheese and yogurt are also recommended dairy foods. Try to abstain from high intake of ice cream and cheese that is high in fat. 


Lastly, at the top of the food pyramid lie fats, including oils, and sweets. The recommended quantity of these items is limited to sparing use. Coping With Your Child’s Food Allergies While Traveling




Childhood food allergies can be deadly. Take care to protect your child while traveling.

If possible, make sure your child knows and understands the foods they are allergic to and what happens when they eat that food. If traveling to visit friends or family, be sure to inform them of the child’s allergy. Ask them to be diligent in reading labels while your child is visiting.

Some airlines list flight meals on their website. Most airlines provide special meals for those with food allergies, if you notify them in advance. Check with your airline for details. However, there is no guarantee that your meal will not be prepared or come in contact with something you are allergic to. Avoid potential problems on the road or airplane by making and packing trip snacks yourself.

When eating out, be sure to ask servers about offending ingredients and avoid roadside stands and unlicensed eating establishments.

Different countries have different food labeling laws. Make sure you know the labeling laws and customs for the country you are visiting. Also, you and your child must know how to effectively communicate the name of the food and severity of the allergy in the language of every country you visit.

The food allergic child should wear medical alert bracelet at all times. In an emergency, parents my not be available to give information to medical personnel.

Carry your child’s allergy medication and emergency injectable with you at all times. The medications should go where ever the child goes.

Keep doctor’s phone number and local emergency numbers handy.


If traveling out of the country consider purchasing pre-printed cards with your child’s food allergy information printed on them. You order cards from a company called Select Wisely. Cards come in many languages and cover any allergy or combination of allergies.

Turkey Schnitzel and Roasted Tomato Coulis for CBC's Weekend Morning Show

This morning I am featuring a simple dish to prepare that is full of great summer flavour CBC's Weekend Morning Show with host Nadia Kidwai.

The basil and tomatoes are from Almost Urban Farm, and available today at the St. Norbert's Farmer's Market. The roasted tomato coulis is very easy to prepare and can be used in many ways.

For the Schnitzel:
1 Turkey Breast (I used a local free range turkey that I cut into parts and the breast was large enough for more than 5 portions)
1 egg
1/4 tsp grated nutmeg
1/4 tsp smoked paprika
Salt and pepper to taste
1 cup Panko bread crumbs *
1/2 tbs butter (I used Notre Dame butter, local)

* Panko bread crumbs available at many Asian groceries


For the Charred Tomato Coulis:

2-3 medium tomatoes (available at St. Norbert's Farmer's Market)
2-3 cloves garlic, minced
1 tbs fresh basil, chopped (available at Almost Urban Farms at St. Norbert's Farmer's Market)
salt and pepper to taste
1 tbs olive oil

Charred Tomato Coulis: In a baking dish, bake whole tomatoes (without stems) at 350�F until tomatoes begin to darken (up to one hour). Let cool. In a food processor or blender mix all ingredients until well blended into a loose paste. Set aside and chill.

Turkey Schnitzel: Cut Turkey breast into small fist size pieces (maybe a child�s fist size). On a cutting board, place turkey breast piece and cover with plastic wrap. With a food hammer or pounder, flatten Turkey breast piece until quite thin. Set each piece aside and then soak in the beaten eggs. On a plate mix Panko bread crumbs, nutmeg, paprika and salt and pepper. Bread each Turkey piece well and place in a medium high heat pan with butter. Saut� Turkey schnitzel pieces until brown on both sides. Place on plate to rest and DRIZZLE the charred tomato coulis on plate to bring out the natural sweetness of the flavours. A variety of mustards also accent the turkey schnitzel nicely.

Can You Feed Your Children Raw Food?




Every mother wants the best for her child.  You want your child to look healthy, grow proportionately, feel energized and have a great immune system.  So, why do most parents in America feed their children junk food by the time they start eating table food?  Why do most restaurants serve French fries or macaroni and cheese for side orders and not steamed broccoli?  It is really a sad situation to watch young children who are obese.  Even schools offer peanut butter and jelly or ice cream for lunch. 

To ensure that your child is eating correctly you must feed them plenty of fruits and vegetables.  But the trick is to make it delicious and fun.  For instance, for breakfast, arrange a platter of fruit, oranges, grapefruit, bananas, strawberries, blueberries, they will love it!  Make faces out of the fruit.  Have them drink only water and no sugar 100% fruit juice that you juice yourself.  Get them used to eating vegetables that are uncooked.  Whenever they get hungry, offer small baby carrots, or celery, they will grow to love the taste just the way it is.  You can introduce a new vegetable each week and learn how to hide it into your food.  For instance, chop up Portobello mushrooms in a chopper and add it to your pasta sauce and watch them gobble it up, barely noticing the mushrooms.  Make blanched broccoli (plain) and eat that for dinner.  If they see you eating healthy, they will learn early on to eat that way.  Do not let them eat packaged foods, such as macaroni and cheese, or fried chicken fingers, or anything fried for that matter.  Make sure that they eat vegetables at every meal and be careful when you go out to eat. 

Offer natural desserts that you have made at home, such as homemade sorbet, or fruit smoothie, or peach cobbler pie (all natural).  Stay away from cakes, cookies, etc that have preservatives and other unnatural flavorings.  Make it yourself and offer it occasionally.  You will find that they watch you and what you eat and if you incorporate a much healthier menu, so will they. 

The best part of raising your children to learn to love fruits and vegetables is that you will notice that they will turn down junk food when you are not around.  At that point you will know that you have done your part in raising healthy adults.
